BIWA’s Makgeolli Brewers

금정산성 막걸리 체험

  Do you like Makgeolli, the Korean rice wine? Have you ever thought about how it is made? Several weeks ago, I went with a group from Busan International Women’s Association (BIWA) to the Sanseong Makgeolli Brewery (Tel: 010-2783-9965) where you can make your very own makgeolli to take home with you. We learned a little about the history of this rice wine. Makgeolli is the oldest alcoholic drink in Korean cuisine. It originally dates back to Goryeo (Korean dynasty, 918-1392) and it has been traditionally made for over 500 years on this mountain in Busan. Sanseong Makgeolli Brewery is located on Geumjeongsan Mountain, a mountain that has crystal clean fresh water and the perfect temperatures for producing nuruk, Korean traditional yeast.

  막걸리를 좋아하는가? 막걸리를 만드는 방법에 대해 생각해본 적 있는가? 몇 주 전 나는 부산국제여성회(BIWA; Busan International Women’s Association)와 함께 금정산성 막걸리 양조장(Tel: 010-2783-9965)을 찾았다. 자신만의 막걸리를 만들어 집으로 가져갈 수 있는 곳이다! 막걸리의 역사에 대해서도 배웠다. 막걸리는 한국에서 가장 오래된 술로, 기원은 고려시대(918-1392년)까지 거슬러 올라간다. 금정산성 막걸리는 500년이 넘는 역사를 가지고 있으며, 금정산성 막걸리 양조장은 한국 전통 이스트(yeast)라고 할 수 있는 누룩을 만들기에 적합한 맑은 물과 온도를 갖췄다.



  We learned that it was the women’s job to step on the water and yeast mixture, which is wrapped in hemp cloth, and knead it into dough. The kneaded disks are then kept in a special room where the temperature is carefully regulated to begin the first fermentation process. Traditionally it is made with only three ingredients: rice, a wheat-based Korean fermentation starter called nuruk and water. There are many precise steps in this process to make this milky white, low-alcohol, “farmer’s wine.” We certainly enjoyed the morning in the village high in the mountains. If you want to make a whole day of it you could ride the cable car up the mountain and then hike around the ancient fortress. Just take bus no.203 to get you near the cable cars. The next time I have a glass of Makgeolli I will certainly appreciate it in a deeper way.

  물과 누룩을 삼베로 만 뒤 발로 밟아 치대며 반죽을 만드는 것은 여성들의 일이었다. 이후 온도를 세심하게 조절해 둔 방 안에 동그란 모양의 반죽을 넣고 첫 발효 과정을 거친다. 전통적으로 막걸리에 들어가는 세 가지 재료는 쌀, 맥아로 만든 한국 전통 발효제인 누룩 그리고 물이다. “농부들의 술”이라고 불리는 이 우윳빛의 저알콜 주류를 만들기 위해서는 여러 단계를 거쳐야 한다. 우리는 막걸리를 만들며 즐거운 아침을 보냈다. 하루 종일 금정산을 즐기고 싶다면 케이블카를 타고 올라가 금정산성 주변에서 하이킹을 하는 것도 좋다. 203번 버스를 타면 케이블카 근처까지 갈 수 있다. 다음 번에 막걸리를 마실 일이 있다면 보다 더 음미할 수 있을 것 같다.



  This type of outing is just one of the many things that I love about BIWA. BIWA was founded in 1965 by 30 ladies from 4 or 5 different countries including the wife of the mayor of Busan, the wife of the Governor of Gyeongnam; other prominent members of the local Korean community including wives of the Commander and officers of Hialeah; and expatriate ladies residing in the area. I joined BIWA three years ago when I arrived in Busan as a bewildered expat. Since then I have made wonderful Korean and international friends. I have learned so much about the Korean culture and the culture of other lands too. I have gone on many fun day trips, made a Korean style box using Hanji paper, posed in hanbok, and learned how to make rice cakes. I have loved leading the English conversation group and meeting weekly with these smart, fun and interesting ladies.

  BIWA is not only a cultural exchange club but we are also a charity organization. We help support children’s homes, the elderly, and a women’s shelter with the proceeds from our annual fundraisers. Some of our members serve at the soup kitchen, some visit the children’s home to play with the kids. There are many ways to help others in need. BIWA’s biggest fundraiser is the Christmas Bazaar held in early December each year. At the Christmas Bazaar you will find crafts and food made from ladies across the world, music from our local schools and even Santa makes a special appearance to have his photo taken with the children. It is quite a festive occasion! We are looking for more international ladies to join us in our efforts. I can honestly say that my time in Korea has been much richer because of my involvement in BIWA.

  이번 막걸리 체험과 같은 활동은 BIWA와 함께하는 여러 활동들 중 하나다. BIWA는 1965년 부산시장의 부인, 경남도지사의 부인, 부산경남 지역 유력인사들의 부인, 하야리아 부대 사령관과 장교들의 부인, 부산 거주 외국인 여성 등 4~5개국 30여 명의 여성들에 의해 설립되었다. 나는 3년 전 부산 생활을 시작할 무렵 BIWA에 가입했다. 이를 계기로 여러 훌륭한 한국인, 외국인 친구들이 생겼고 한국과 여러 나라에 대해 정말 많은 것을 배웠다. 우리는 여행을 다니기도, 한지를 이용한 공예를 배우기도, 한복을 입고 포즈를 취하기도, 떡 만드는 법을 배우기도 했다! 똑똑하고 유쾌한 여성 친구들과 매주 만나 영어 회화 스터디를 하는 것도 항상 즐겁다.

  BIWA는 문화 교류의 장이자 자선단체이기도 하다. 매년 모금을 통해 어린이나 노약자, 여성들의 주거 지원 활동과 무료 급식 활동, 가정 방문 아동 케어 등 다양한 방법으로 도움이 필요한 사람들을 돕고 있다. BIWA의 가장 큰 모금행사는 매년 12월에 열리는 크리스마스 바자회다. 크리스마스 바자회에는 전세계에서 온 여성들이 만든 공예품과 음식, 공연을 볼 수 있고, 산타도 등장해 어린이들과 사진도 찍는다! BIWA에서는 함께 할 세계 각국의 여성들을 기다리고 있다. BIWA 활동 덕분에 내 부산 생활이 훨씬 풍요로워졌다고 자신 있게 말할 수 있다.
