새로운 ‘세계의 슈퍼 푸드’가 한식이라는 사실이 너무나도 기쁘다. 그렇다. 세계는 지금 한식과 사랑에 빠졌다! 전세계 어디에서나 한식을 먹을 수 있다니 좋은 소식이 아닐 수 없다. 나는 지금 모로코에 있는 훌륭한 한식당에 앉아있다. 내 아파트 근처에 있는 이곳은 내가 좋아하는 맛있는 한식을 전부 맛볼 수 있다. 당연히 김치를 포함해서 말이다! 친구들과 가족

한식, 세계로 뻗어나가다!

 


I still remember the exact spot in Busan where my taste buds first came into contact with kimchi. It was on a Friday evening and a fellow teacher was taking me out on the town. We went to a great Korean restaurant and he ordered the greatest things I could never have imagined. Coincidentally it was also the very first time I had ever tried soju. The Korean waitress was in a hurry and quickly placed a plethora of small dishes on our table. I stared at the deep red dish in front of me and my friend told me in a very enthusiastic tone that the dish was called 'kimchee' and that it was the Korean national dish. He then scooped half of it up and swallowed it in one big gulp. I was shocked as the look of ecstasy filled his face. He then beckoned me to try it and I did. I brought the soggy res cabbage to my lips and placed it slowly inside my mouth; and then my face puckered. I did not like it. It was hot and sour and my tongue was on fire! I gulped my water and my friend laughed and assured me that it would take a while to get used to. And so for years I managed to avoid it. It was everywhere in my life. The students brought it to school; all the big grocery stores sold it in bulk. Yet I never tried it again for years. But then, one day in a deep dark jungle, it came to me again. Yes, I fell in love with kimchee in Africa, inside a jungle near the great Victoria Falls! This sounds impossible but it is true. You see my best Korean friend who I always travel with always bought duty free kimchee at the Busan airport and brought it to all the far away places we traveled to. He brought it to Mexico, Rome, Istanbul, and about fifty more world cities. He loved the stuff and carried it on buses and inside buffets and ploped it on tacos and pho and cous cous and all other international foods. And so as we arrived in Zambia he had it in his back pack and made sure he brought it as we started our long day at Victoria Falls. 


내가 처음으로 김치를 접했던 순간 내가 있었던 부산의 장소를 아직도 정확하게 기억한다. 동료 선생님 한 명과 시내로 외출한 금요일 저녁이었다. 근사한 한식집에서, 그는 내가 상상해 본 적 없는 엄청난 음식들을 주문했다. 우연적이게도 그 날은 내가 처음으로 소주를 마셔본 날이기도 했다. 직원이 빠르게 다가와 엄청난 양의 반찬을 테이블에 놓았다. 내 앞에 놓인 짙고 빨간 음식을 내려다보고 있으니, 동료가 아주 열의에 찬 목소리로 그 음식의 이름이 ‘김치’이며 한국을 대표하는 음식이라고 말해주었다. 그리고는 김치 절반 정도를 떠서 한입에 꿀꺽 삼켜버렸다. 그의 얼굴에 떠오른 황홀한 표정이 놀라웠다. 동료는 내게 한 번 먹어보라 권했고 나는 그렇게 했다. 축축하고 빨간 배추를 내 입술로 가져와 천천히 입 안으로 넣었다. 그리고 내 얼굴은 일그러졌다. 내 취향이 아니었다. 김치는 맵고 시었고, 내 혀는 불타고 있었으니까! 물을 벌컥벌컥 들이키는 나를 본 동료는 익숙해지는 데 시간이 조금 걸릴 거라고 웃으며 말했다. 그 후 몇 년 간 나는 김치를 피해 왔다. 어디를 가든 김치가 있었다. 학생들이 학교에 김치를 가져왔고, 큰 식료품점에서는 큰 통으로 김치를 팔았다. 그래도 나는 몇 년 간 김치를 다시 먹지 않았다. 그러던 어느 날, 깊고 어두운 정글에서 김치는 다시금 나를 찾아왔다. 그렇다. 거대한 빅토리아 폭포 근처, 아프리카의 정글 속에서 나는 김치와 사랑에 빠지고 만 것이었다! 불가능한 이야기처럼 들리겠지만 사실이다. 늘 함께 여행을 다니는 내 절친한 한국인 친구는 언제나 김해공항 면세점에서 김치를 사서 전세계로 가지고 다녔던 것이다. 그는 김치와 함께 멕시코, 로마, 이스탄불을 포함해 50개국이 넘는 도시를 여행했다. 김치를 너무나 사랑한 그는 김치를 가지고 버스를 탔고, 뷔페에 가면 타코나 포, 쿠스쿠스처럼 전세계의 온갖 음식들 위에 올려 먹곤 했다. 스스로 퓨전 음식을 만들어 즐긴 셈이다! 우리가 잠비아에 도착한 그 날에도 김치는 그의 가방 안에 있었고, 빅토리아 호수를 향해 긴 여정을 떠난 바로 그 날 아침에도 김치를 가져왔던 것이다.


It was an especially long day. I call it 'the longest day'. Victoria Falls is in two countries and we had to rush to see both sides! It was magnificent but so tiring. I had brought food in my back pack but I was attacked by some giant baboons and had thrown them my sandwiches! Yes...baboons are wild and free at Victoria Falls. I was just happy I survived the attack but now I had no food! And so around five pm I was starving; and my friend and I stopped inside the deep jungle near the boiling point at the falls and he sat down on a log, took out his pack of kimchee and some chop sticks, and began to eat. He always offered me some of his kimchee....probably a million times... and I always refused. But this time was difderent- I was truly starving. He sensed that I was on the verge of death and he handed me his plastic foood container and I looked at the red pool of mush. It was a mysterious moment in time....the sound of the falls combined with my hunger and the wild scents of the jungle... I was feeling brave and so I brought a small piece to my lips -and then something hit me! I was in ecstacy! The deep sour spicy taste created a flood of dopamine inside my brain! I soon began eating clumps and clumps of it in a hurry! I was in love!


그 날은 정말이지 긴 하루였다. ‘내 평생 가장 길었던 하루’라고 불러야 할 것 같다. 빅토리아 호수는 두 나라에 걸쳐 있어서, 우리는 양쪽에서 폭포를 보기 위해 달려야만 했다. 어마어마한 장관이었지만 피곤한 일정이기도 했다. 내 배낭에도 음식을 넣어갔지만 거대한 개코원숭이 몇 마리가 공격하는 바람에 내 샌드위치를 던져줄 수밖에 없었다. 그랬다. 빅토리아 호수를 자유롭게 누비는 개코원숭이들은 사나웠다. 그들의 공격에서 살아남았다는 사실에 그저 기뻤으나, 문제는 내게 남은 음식이 없다는 거였다. 그렇게 오후 5시가 다 되도록 나는 쫄쫄 굶고 있었다. 친구와 나는 정글 깊숙이 위치한 폭포의 시작점이자 끓는 냄비라고 불리는 지점 근처에 멈춰 섰다. 친구는 통나무 위에 앉아 김치통과 젓가락을 꺼내 먹기 시작했다. 그 때까지 그는 내게 백만 번 정도 김치를 권했었고, 나는 그 동안 꾸준히 거절해왔다. 하지만 이번만큼은 달랐다. 나는 말 그대로 굶주림에 시달리고 있었다. 내가 죽음의 문턱에 있다는 사실을 눈치챈 그가 플라스틱 음식통을 내밀었고, 나는 그 속에서 새빨간 양념을 보았다. 정말이지 불가사의한 일이었다. 폭포 소리와 야생 정글의 향기가 배고픔과 뒤섞여 내게 용기를 주었다! 그래서 나는 작은 조각을 집어 입으로 가져왔다. 그리고 무언가가 나를 덮쳤다! 황홀경이었다! 깊고 매콤새콤한 맛이 내 머릿속에서 도파민의 홍수를 만들어냈다. 나는 서둘러 김치를 먹고 또 먹었다. 사랑에 빠진 것이었다!


And so you can see that I have a very special relationship with kimchee! In fact I am addicted to it! It is my favorite food in this world and I promote it wherever I go! 


보다시피 나는 김치와 아주 특별한 인연을 갖고 있다. 중독되었다고 말할 수 있다. 세상에서 제일 좋아하는 음식이 되었고, 어딜 가든 김치를 홍보하고 다닌다.




And so I am so happy that the new World Super Food is indeed Korean food! Yes, the world is now in love with Korean food! This is good news  since I can get it in any city around the world! Here I sit in Morocco and there is a fantastic Korean restaurant near my apartment that serves all the great Korean foods that I love...including kimchee! I must say that it is so fantastic that friends and family all now love Korean food! I have eaten Korean feasts in London and Paris-Rome and New York! In fact many Korean restaurants are earning the famous Michelin stars all around this world! But what took the world so long to fall in love with it? I have two theories. The first is the fact that it does take time to get used to. The taste is so new that many people cannot appreciate the flood of new taste experiences. The second theory is because Korean food is very difficult to prepare. Making kimchee takes time and very special ingredients. If one ingredient is missing then it just does not taste the same. I was in Texas recently and was craving a bag of kimchee. I simply went to ebay and bought a large bag for only twenty dollers! To me it was perfect! Yet some Koreans complained because the maker had used a different hot pepper spice that did not come  from Korea. I tasted of it again and realized this was indeed true! And so you can see that the perfect Korean food MUST contain authentic ingredients. This is very difficult and costly. I think it is a little like the Paris baguettes. The world loves French bread but it is very hard to imitate. I heard of a restaurant in New York that flies in French bread fresh everyday! And this is also what must be done with kimchee as its popularity soars to new heights!   


새로운 ‘세계의 슈퍼 푸드’가 한식이라는 사실이 너무나도 기쁘다. 그렇다. 세계는 지금 한식과 사랑에 빠졌다! 전세계 어디에서나 한식을 먹을 수 있다니 좋은 소식이 아닐 수 없다. 나는 지금 모로코에 있는 훌륭한 한식당에 앉아있다. 내 아파트 근처에 있는 이곳은 내가 좋아하는 맛있는 한식을 전부 맛볼 수 있다. 당연히 김치를 포함해서 말이다! 친구들과 가족들 모두 한식을 사랑하게 되었다는 사실이 얼마나 멋진 일인지 언급하지 않을 수 없다. 런던에서, 파리와 로마에서, 뉴욕에서도 한식을 먹었다. 실제로 전세계의 많은 한식당들이 그 유명한 미슐랭 스타 리스트에 이름을 올리고 있다. 하지만 세상이 한식을 좋아하게 되기까지 왜 이렇게 오랜 시간이 걸린 걸까? 내게 두 가지 가설이 있다. 첫째, 적응하는 데 시간이 걸리는 음식이다. 너무나도 새로운 맛이라 많은 사람들은 이 ‘새로운 맛’의 홍수의 진가를 쉽게 알아볼 수 없다. 둘째, 한식은 준비하는 데 무척 손이 간다. 김치를 만드는 데는 시간이 필요한 데다 특별한 재료가 들어간다. 재료 하나가 빠지면 같은 맛이 나지 않는다. 최근 텍사스에 머무르며 김치가 너무나도 먹고 싶었던 나는 이베이에 들어가 20달러에 커다란 김치 한 팩을 샀다. 내게 그 김치는 완벽 그 자체였다. 하지만 한국인들은 그 김치를 만든 사람이 한국산이 아닌 고춧가루를 썼다며 불평했다. 다시 한 번 맛을 본 나는 그 말이 옳다는 사실을 깨달았다! 그러니 완전한 한식이 되려면 ‘반드시’ 진품 재료를 써야 한다는 말이다. 아주 어렵고 비용이 많이 드는 일이 아닐 수 없다. 파리의 바게트와 닮았다는 생각을 한다. 전세계가 프랑스 빵을 사랑하지만 그 빵을 흉내 내어 만들기란 정말이지 어렵다. 매일매일 프랑스에서 빵을 실어오는 뉴욕의 식당이 있다고 들은 적도 있다. 김치의 인기가 고공행진함에 따라 이와 마찬가지의 과정이 필요해졌다.
