Veganism in Busan

부산의 비건에 대하여

  At first glance, Busan seems a rough landscape for vegans. Korea’s meat consumption is excessive, fishing is a key part of Busan’s heritage, and the rich Western diet has taken root, covering everything in a layer of cheese. But simmering beneath that surface, is a vibrant vegan scene. Here is how you can tap into that community and thrive, while supporting and enjoying local culture.

  It turns out that Busan has plenty of vegans, besides the Buddhist monks and tourists. In fact, Busan has several completely vegan spaces. Recently, a few of these establishments were displayed on interactive flyers called Vegan Road Busan, where people can collect stamps on their flyer at each of the places. HOME Bistro and Café, Palmtree, Maechorom, Vivid Book Store, April and May 45, and Hanminiui Makeurobiotic Cafe were all featured.

  처음에 부산은 비건이 살기에는 힘든 곳처럼 보였다. 한국의 육류 소비량은 어마어마한 수준이고, 낚시는 중요한 부산 문화의 일부였으며, 서양식 식단의 영향으로 모든 음식에 치즈를 얹어 먹었다. 하지만 수면 아래를 들여다보면 활기 넘치는 비건의 세상이 보인다. 부산의 문화를 즐기면서도 비건으로 살아갈 수 있는 방법이 여기 있다.
  
  부산에는 스님이나 관광객 외에도 많은 비건들이 살고 있다. 비건이 많아짐에 따라 부산 비건 로드라는 책자까지 나올 정도이며, 사람들은 이 책자를 들고 각 비건 레스토랑에 방문해 스탬프를 모을 수 있다. 홈 비스트로 앤 카페, 팜트리, 매초롬, 책방 비비드, 꽃피는 4월 밀익는 5월, 한민이의 마크로비오틱 카페는 모두 비건 식당이다.

  Eating at non-vegan restaurants, on the other hand, can be tricky for vegans. Many soups and stews are traditionally made from a seaweed and anchovy base. Even beloved kimchi often contains some kind of fishy element such as fish sauce, shrimp paste, whole fish, or oysters. If you are one hundred percent vegan, it is best to thoroughly ask the server about dishes before ordering them or steer clear of unknown menu items. Learning Korean and a bit about Korean cuisine will be tremendously beneficial. But when in doubt, these foods tend to be the most vegan-friendly:

  비건 식당이 아닌 일반 식당에서 식사를 하는 것은 까다로울 수 있다. 대부분의 한국 전통 국과 찌개는 해조류와 멸치 육수로 만든다. 그 유명한 김치에도 생선 액젓, 새우젓, 생선살, 굴과 같은 해산물이 들어간다. 100% 비건이라면 종업원에게 음식을 주문하기 전 자세하게 물어보거나 모르는 메뉴는 아예 도전하지 않는 편이 좋다. 한국어와 한국 음식에 대한 지식은 아주 큰 도움이 된다. 하지만 의심스럽다다면, 아래 메뉴들이 가장 비건에게 알맞은 음식이다:

1) Bibimbap 비빔밥
  Mixed rice topped with fresh and pickled veggies. Be sure to ask for no egg and check for beef, mix well, and enjoy!
  신선한 절임 채소가 올라간 밥. 달걀이나 소고기가 들어가지 않았는지 확실히 살핀 후 잘 섞어서 맛있게 먹으면 된다!

2) Bibimmyeon 비빔면
  Wheat noodles topped in spicy red pepper sauce and fresh vegetables. Be sure to ask for no egg, mix that sweet and spicy sauce well.
  매콤한 고추장과 신선한 채소가 올라간 밀면. 달걀이 들어가지 않았는지 확인하고, 매콤달콤한 소스를 잘 섞어 먹으면 된다.

3) Vegetable Kimbap 야채 김밥
  Tasty veggies rolled up inside rice and seaweed paper. You have to ask for you kimbap without imitation crab, ham, egg, mayonnaise, fish cakes, or cheese.
  맛있는 채소를 밥과 김으로 싼 음식. 게맛살, 햄, 달걀, 마요네즈, 어묵, 치즈 등이 들어가지 않았는지 잘 확인해야 한다.

4) Kongguksu 콩국수
  Wheat noodles in cold broth made from soybeans and topped with fresh vegetables. Check for no egg on top and enjoy on a hot day.
  차가운 콩 육수로 만든 밀면. 신선한 채소 토핑을 곁들여 먹는다. 위에 달걀이 없는지 확인할 것. 더운 날에 먹기 좋다.

5) Jeon 전
  Large fried pancakes. Green onion pancake, or pajeon, Asian chive pancakes, or buchujeon, and potato pancakes, or gamjajeon, are all excellent options for vegans. They also make for tasty bar snacks. Just double check that there is no egg or seafood.
  커다란 팬케이크. 파전, 부추전, 감자전은 아주 좋은 비건 메뉴다. 안주로도 딱이다. 달걀이나 해산물이 있는 지 잘 확인할 것.

6) Gondeurebap 곤드레밥
  Steamed rice and gondeure, a tasty dark green thistle, served with a seasoning sauce. Check that the seasoning sauce has no seafood in it.
  맛있는 곤드레를 섞어 찐 밥. 소스와 함께 나온다. 소스에 해산물에 들어가지 않았는지 확인할 것.

7) Yeongyangbap 영양밥
  Steamed rice topped with nutritious nuts, seeds, and beans and served with a seasoning sauce. Check that the seasoning sauce has no seafood in it.
  영양가 높은 견과류, 씨앗류, 콩을 올린 찐밥. 소스와 함께 나온다. 소스에 해산물이 들어가지 않았는지 확인할 것.

8) Juk 죽
  Porridge. Patjuk, red bean porridge, hobakjuk, pumpkin porridge, and yachaejuk, are all delectable. Just check that the broth is vegan.
  흰죽, 팥죽, 호박죽, 채소죽 모두 맛있다. 채소 육수인지만 확인하면 된다.

9) Sundubu 순두부
  Soft tofu served with vegetables, and a seasoning sauce. The homemade fresh tofu in Busan is not to be missed! Just check that the seasoning sauce has no seafood in it.
  채소와 양념을 곁들인 연한 두부. 부산에 왔다면 갓 만든 신선한 수제 두부를 절대 놓쳐서는 안 된다! 소스에 해산물이 들어가지 않았는지 확인할 것.

10) Bindaetteok 빈대떡
  A crispy fried mung bean pancake with vegetables and soy sauce for dipping, often found at local traditional markets. Check that it does not contain egg or seafood.
  채소가 들어간 바삭한 녹두 팬케이크. 간장에 찍어먹는다. 전통시장에서 종종 찾을 수 있다. 달걀이나 해산물이 들어가지 않았는지 확인할 것.

  Note that if any of these items come with kimchi, the kimchi most likely has trace amounts of seafood in it.

  That being said, Korea has always had a lot going for it veggie-wise. There is a long history of Buddhism and the vegan food that comes along with it and an exceptional understanding and use of wild plants. There is soy milk and tofu galore. And let us not forget all the fantastic fermented and pickled veggie side dishes, or banchan. It would truly be a shame to miss out because of anchovies.

  So how can one have their vegan cake and eat it, too? Go to the local market. You know, the one where the older generation goes on foot to shop and the goods are on colorful display along narrow alleyways. Savor seasonal, domestic produce for cheap and place your won directly in the hands of Korean people. Bonus points for bringing your own produce bags and Tupperware for the fresh, package-free tofu so you do not need plastic bags!

  이 음식들과 김치가 함께 나올 경우, 대부분의 김치에는 소량의 해산물이 들어가 있다는 사실을 명심해야 한다.

  그렇지만 한국은 언제나 채식을 사랑해 온 나라다. 한국에는 기나긴 불교의 역사와 함께 이어져 온 비건 음식이 있다. 이와 더불어 야생 식물에 조예가 깊어 다양한 방식으로 조리한다. 두유와 두부도 그 예다. 맛있게 절인 채소로 가득한 반찬도 결코 빼놓을 수 없다. 멸치 때문에 반찬을 포기하는 건 정말 아쉬운 일이다.

  비건으로서 두 마리 토끼를 잡으려면 어떻게 해야 할까? 전통시장에 가면 된다. 어르신들이 장보러 가는 곳 말이다. 좁은 통로를 따라 화려한 진열대들을 볼 수 있다. 면대면 거래를 통해 저렴한 가격으로 맛있는 한국산 제철 식품을 구할 수 있다. 개인 장바구니와 반찬통을 챙겨가면 신선한 두부를 살 때 비닐봉지를 사용하지 않아도 된다!

  Need a large amount of fresh fruits and vegetables on the cheap? Head to the Banyeo Agricultural Market, opened every day except Sunday.

  Once home, have fun veganizing your favorite Korean dishes. It is a great way to meet the culture halfway.

  Here are some easy and delicious vegan substitutions. Roll a kimbap with mashed chickpeas sprinkled with roasted seaweed flakes and salt instead of tuna. For fish-free stock, use seaweed (dashima) and dried portobello mushroom (pyogo beoseot). Replace raw fish with avocado, dip in soy sauce, and enjoy with rice. How about those dear Busan fishcakes? Fried tofu (yubu) can be found in grocery stores, has a surprisingly similar texture, and is tasty in soup or kimbap.

  저렴한 가격에 신선한 과일과 채소를 구하고 싶다고? 일요일을 제외하고 6일 내내 열리는 반여농산물도매시장이 있다.

  집에 돌아와 당신이 가장 좋아하는 한국 채식 요리를 만들어 보자. 한국 문화를 썩 괜찮은 방식으로 누릴 수 있다.

  쉽게 구할 수 있는 비건용 대체 음식도 있다. 참치 대신 구운 김가루와 소금을 뿌린 으깬 병아리콩으로 김밥을 마는 것이다. 생선이 없는 육수를 만들 때는 다시마와 말린 표고 버섯을 이용한다. 생선은 아보카도로 대체해 간장에 찍어 밥과 함께 먹으면 된다. 맛있는 부산 어묵을 먹고 싶다면? 마트에서 구할 수 있는 건조시킨 두부(유부)는 어묵과 놀랍도록 유사한 질감을 가지고 있는데다 국이나 김밥에 넣어 먹어도 아주 맛있다.

  Whether or not we identify as vegan, abstaining from the consumption of animals is compassionate, healthy, and one of the best ways to reduce our carbon footprint. Yes, nearly all Busan expats flew here using a carbon-intensive mode of transportation difficult to offset, but in a world that is already compromised and in which we are all in some way complicit, we do what we can. It is possible to eat vegan in beautiful Busan while supporting local businesses, appreciating culture, and enjoying life!
